Not gonna lie--I just made a pretty amazing salsa. Props to Nevelle for teaching me that I can make salsa--quick, cheap and easy. And it feels really good to have something you made taste like you bought it. I tried this over Christmas and it wasn’t quite right...I think this one is perfect though. Needless to say, I changed a few things.
3 tomatillos
1/2 of a serano chili
1/2 of a red chili (forgot the name)
handful of cilantro
3 cloves garlic
some salt
1/2 of a red onion.
1 can of diced tomatoes (i got the can with chiles in it too)
Husk and rinse the tomatillos. Put them on a baking sheet with chiles and broil for about 10 minutes--turning occasionally. Take out (don’t remove broiled crust part) and let cool. Place whole garlic (skin removed) and onions in a frying pan without oil. Toss over high heat for a few minutes until they are starting to brown. Remove and cool.
Remove the seeds from the chiles and Place everything in the food processor. Salt to taste. Done. Easy, right? Yeah, and good too.
There you go. Now I must return to getting ready for the golden globes party. I am wearing my sequin pants, sequin belt, excessive jewelry and bright pink lipstick. oh yeah, and my fur coat.
